1. Virgin Strawberry Daiquiri
Ingredients:
- 2 cups frozen strawberries
- ½ cup simple syrup
- 3 tablespoons lime juice, fresh squeezed
- 1 cup tonic water or lemon-lime soda (Sprite)
- 1/2 to 3/4 cup water
- 1 cup ice
Directions: Place all ingredients in a blender and blend until smooth, thick puree forms, adding just enough water and stopping and scraping as necessary. If desired, serve with a small splash of lemon-lime soda in each glass (this can make a more drinkable texture depending on how much liquid you use). Garnish with strawberries and lime wheels, if desired.
2. Blackberry Virgin Mojito
Ingredients:
For Mint Syrup:
- 1/2 c packed fresh mint leaves
- 1 c granulated sugar
- 1 c water
For Mojito:
- 1 cup blackberries
- 1 tsp granulated sugar
- 1/2 cup lime juice
- Ice
- 340 grams cans seltzer
- Fresh mint for garnish
Directions: Crush mint leaves in a small pot using a wooden spoon or mortar and pestle. Add sugar and water and bring to a boil over medium heat (keep stirring to dissolve sugar). Allow the mixture to boil for 3 minutes. Let it cool to room temperature, then strain out mint leaves, pressing with a wooden spoon to help release all liquid. In a small bowl, add blackberries and sugar and, using a wooden spoon, crush blackberries until broken down. Divide blackberries between four glasses and add two tablespoons of simple syrup and two tablespoons of lime juice to each glass. Fill the glasses with ice and top off with seltzer. Finally, garnish with mint.
3. Virgin Margarita
Ingredients:
- 2 tablespoons fresh lime juice
- 1 tablespoon fresh lemon juice
- ½ teaspoon maple syrup or simple syrup
- ¼ teaspoon pickle juice (optional, adds that tequila flavor)
- 3 ounces tonic water
For the Garnish:
- Lime wheel
Directions: Cut a notch in a lime wedge, then run the lime around the rim of a glass. Dip the edge of the rim into a plate of flaky sea salt (or for a festive look, use margarita salt). In a serving glass, stir together the lime juice, lemon juice, maple syrup, and pickle juice (adds just the right funky flavor to mimic tequila). Add the tonic water and ice. Garnish with a lime wheel and serve.
4. Virgin Pina Colada
Ingredients:
- 1 bag frozen pineapple chunks (you can also opt for pineapple juice)
- 4 large scoops of vanilla or coconut ice cream (about 1 cup)
- 1 c coconut milk
- 1/2 c pineapple juice
- Pineapple wedge for serving
- Maraschino cherry for serving
Directions: Blend frozen pineapple, ice cream, coconut milk, and pineapple juice in a blender. Divide between glasses and garnish with a pineapple wedge and maraschino cherry.
5. Brazilian Lemonade
Ingredients:
- 3 limes
- 1/3 c sugar
- 3 c water
- 3 tbsp sweetened condensed milk
- Ice
Directions: Wash and quarter the limes. Add sugar, water, sweetened condensed milk, and limes to the blender. Pulse until the limes are thoroughly chopped. Then pour the mixture through a strainer to remove the peel and pulp. Serve juice over ice, or blend with ice for a more slushy-like consistency.
