Creatively Spooky Food
Being creative with your Halloween costumes and decorations are essential to any spooky celebration but everyone knows that the Halloween party food is one of the most important, if not memorable, parts of the event. Plan a spooky celebration with these two awesome recipes for your Halloween celebration and put a spell on your guests!
1. Scary Monster Wraps
Ingredients:
- Large spinach wraps
- Choose your favorite sandwich filling
- Sliced cheddar cheese and/or nori seaweed wraps for hair and mouth
- Sliced pimiento-stuffed olives for eyes
- Whole olives for bolts
- Cornichon pickles (whole for bolts, halved for eyebrows and nose)
Directions:
- Fill each wrap with your favorite sandwich filling and roll it up like a burrito.
- Cut cheese slices and/or nori in half and cut triangle shapes for hair. Place on 1 half of wrap and cut remaining half into long strips for a mouth.
- Cut smallest cornichons in half lengthwise for eyebrows, then cut a thin slice for nose decoration.
- Place olive slices for eyes and use toothpicks to secure 2 olives or cornichons to sides of wrap for Frankenstein’s bolts.
2. Yummy Mummy Meatloaves
Ingredients:
- 2kg white or yellow potatoes
- Kosher salt and pepper
- 2 large eggs
- 2 tbsp ketchup
- 2 tsp Worcestershire sauce
- 1/2 cup panko or plain bread crumbs
- 2 clove garlic
- 1 medium carrot
- 2kg ground beef
- 1kg ground pork
- 12 grape tomatoes
- 3/4 cup low-fat sour cream
- 1kg peas
Directions:
- Heat oven to 190 C. Line a 12-cup muffin tin with foil liners.
- Place the potatoes in a pot, add enough cold water to cover, and bring to a boil. Add 1 tsp salt, reduce heat, and simmer until just tender (15 to 18 minutes).
- Meanwhile, in a bowl, combine the eggs, ketchup, Worcestershire, 1/2 tsp salt, and 1/4 tsp pepper. Stir in the bread crumbs. Add the garlic and carrot and mix to combine.
- Then add the beef and pork and mix just until incorporated.
- Divide the meat mixture among the foil liners and push a tomato into the center of each one. Transfer to the oven and roast until a thermometer inserted into the meat registers 70 C (14 to 16 minutes).
- Finally, drain the potatoes and return them to the pot. Add the sour cream and 1/4 tsp salt and mash until very smooth.
- Transfer to a pastry bag fitted with a 1/2 inch round tip. Transfer the meatloaves to a platter and pipe the potatoes back and forth over each top to resemble a mummy’s wrapping. Place 2 peas on each for eye decoration.
3. Choco-Dipped Ghost Pretzels
One of the easiest recipes ever! Microwave white candy melts and 1 tsp coconut oil in 20 sec increments, stirring until melted and smooth. Then dip ends of pretzel rods two-thirds of the way in candy melts, shaking off excess, and place on parchment paper lined baking sheet. Let set until firm. Use black edible markers to create your ghost faces.
