Eggs in a Basket
Ingredients:
- 1 tbsp butter
- 1 slice bread
- 1 large egg
- Salt & pepper
Directions:
- In a medium skillet over medium heat, melt butter.
- Use a large glass or paring knife to cut a hole in the middle of your bread, about 6cm in diameter.
- When the butter has melted, place bread and the bread round that was removed from the slice into the skillet.
- Carefully crack the egg into the hole in the toast.
- Cook undisturbed for 2 to 3 minutes, depending on how runny you like your yolk.
- Flip and let cook 20 to 30 seconds longer, then transfer to plate and season with salt and pepper.
Frittata
Ingredients:
- 8 large eggs
- 1/3 cup heavy cream
- 1 cup shredded mozzarella
- Salt, pepper, red pepper flakes
- 2 tbsp extra virgin olive oil
- 1 shallot, minced
- 3 garlic cloves, minced
- 8 mushrooms, sliced
- 1/2 cup ricotta
- 3 cups spinach
Directions:
- Preheat oven to 180°C.
- In a medium bowl, whisk together eggs, heavy cream, and mozzarella. Season with salt, pepper, and a pinch of red pepper flakes.
- In a large skillet over medium heat, heat oil. Add shallot and garlic and cook until soft (5 minutes), then add mushrooms and cook until soft (another 5 minutes more).
- Add spinach and cook until wilted (2 minutes). Season with salt and pepper.
- Pour egg mixture into the skillet, then dollop with ricotta and transfer skillet to oven.
- Bake until eggs are just set (12 minutes).
French Toast
Ingredients:
- 4 large eggs
- 1/4 cup whole milk
- 1 tbsp sugar
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tbsp butter
- 8 slices of day-old bread
- Warm maple syrup for serving
- Butter for serving
Directions:
- In a large mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and nutmeg.
- In a large skillet over medium heat, melt butter.
- Working in batches, coat bread with egg mixture and place in heated skillet.
- Cook until each side is golden (2 to 3 minutes per side).
- Serve with warm maple syrup and butter.
