3 Mother’s Day Breakfast In Bed Ideas

Eggs in a Basket

Ingredients:

  • 1 tbsp butter
  • 1 slice bread
  • 1 large egg
  • Salt & pepper

Directions:

  1. In a medium skillet over medium heat, melt butter.
  2. Use a large glass or paring knife to cut a hole in the middle of your bread, about 6cm in diameter.
  3. When the butter has melted, place bread and the bread round that was removed from the slice into the skillet.
  4. Carefully crack the egg into the hole in the toast.
  5. Cook undisturbed for 2 to 3 minutes, depending on how runny you like your yolk.
  6. Flip and let cook 20 to 30 seconds longer, then transfer to plate and season with salt and pepper.

Frittata

Ingredients:

  • 8 large eggs
  • 1/3 cup heavy cream
  • 1 cup shredded mozzarella
  • Salt, pepper, red pepper flakes
  • 2 tbsp extra virgin olive oil
  • 1 shallot, minced
  • 3 garlic cloves, minced
  • 8 mushrooms, sliced
  • 1/2 cup ricotta
  • 3 cups spinach

Directions:

  1. Preheat oven to 180°C.
  2. In a medium bowl, whisk together eggs, heavy cream, and mozzarella. Season with salt, pepper, and a pinch of red pepper flakes.
  3. In a large skillet over medium heat, heat oil. Add shallot and garlic and cook until soft (5 minutes), then add mushrooms and cook until soft (another 5 minutes more).
  4. Add spinach and cook until wilted (2 minutes). Season with salt and pepper.
  5. Pour egg mixture into the skillet, then dollop with ricotta and transfer skillet to oven.
  6. Bake until eggs are just set (12 minutes).

French Toast

Ingredients:

  • 4 large eggs
  • 1/4 cup whole milk
  • 1 tbsp sugar
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp butter
  • 8 slices of day-old bread
  • Warm maple syrup for serving
  • Butter for serving

Directions:

  1. In a large mixing bowl, whisk together eggs, milk, sugar, vanilla, cinnamon, and nutmeg.
  2. In a large skillet over medium heat, melt butter.
  3. Working in batches, coat bread with egg mixture and place in heated skillet.
  4. Cook until each side is golden (2 to 3 minutes per side).
  5. Serve with warm maple syrup and butter.
